HiR is the Integration of “Him” and “Her”
The name “HiR” represents the integration of opposites. HiR Fine Dining is the creation of Mercedes Noam Kostucki, an artist, entrepreneur and creator. HiR Fine Dining combines refined and luxurious food with a family style environment.
HiR Fine Dining is an intimate 3h dining experience a maximum of 12 guests per night. Dinners take place at Mercy’s culinary home and guests are seated all together along the same table. If you chose to join this culinary adventure, you will be taken on journey that integrates opposites.
Eating at the Chef’s Culinary Home
HiR Fine Dining is where Mercedes Noam Kostucki lives her culinary dreams. She opens her culinary home for up to 12 people per night to experience the magic she creates in the kitchen. The tables are set right outside of the kitchen so that you can see and talk to Mercy as she’s cooking for you. There is no staff at HiR Fine Dining: everything is done by Mercy & Stayce, her wife, business partner and best friend.
Reservations Only
Because it is Stayce & Mercy’s life, HiR Fine Dining is not a walk in restaurant. Reservation has to be made a minimum of 48h before the dinner, ideally 1 month or more before. Before a reservation is confirmed, Mercy calls every guests to talk about the experience, dietary restrictions and transportation. Dinners are confirmed when payment has been received.

I love to try new experiences, and create amazing adventures in which I can guide others.
In everything I am and do, I'm naturally drawn to bringing together things that normally are not supposed to fit with each other.
I have no formal culinary training and never worked in a restaurant before starting HiR Fine Dining. I have worn a lot of different hats, and my main professional background is in business coaching. My first call of fame was at the age of 23 for a TED talk about "selfishness is the best reason to cooperate".
I cook with the freshest produce I can find, and I create dinner based on seasons, my inspiration, and dietary restrictions. Each dinner is a full adventure for guests, and as well as for me.

READ THIS TO UNDERSTAND HOW TO MAKE A RESERVATION
Stayce & Mercy are the only people who works at HiR Fine Dining and you're invited to their culinary home. The only way to come for dinner at HiR Fine Dining is to have a conversation with Stayce or Mercy so that they can talk with you about the dining experience, availability, dietary restrictions, transportation, wine and payment.
DINNER IS CONFIRMED WHEN PAYMENT HAS BEEN RECEIVED - Mercy can physically serve no more than 12 people per night, and cannot humanely be serving dinner 7 nights a week. Preparing a dinner completely from scratch takes about 40h and requires to pour love and care into the food that she’s cooking. For all these reasons, Mercy will only cook for people who are 100% sure they will come. When payment has been received, your dinner is in my agenda and I will schedule my life to serve you as promised.

If Mercy hasn't been able to reach you after 3 phone calls, your request for reservation will be cancelled.

Logistics & Important Information
START & END TIME - Dinners start at 6pm and finish around 9pm. We will wait up to 15 minutes for late guests, and after that dinner will start.
DINNER IS €300 PER PERSON - All nights are 7 plates surprise menu and all dinners are paid in advance. The price includes VAT and transaction fees.
BRING YOUR OWN WINE & DRINKS - Our focus is to prepare the best food possible. We removed the corkage fee and diners are welcome to bring anything they want to drink. We have wine glasses, a bottle opener and a small fridge to keep your drinks cool during the dinner.
PAYMENT METHODS - All dinners are paid in advance. Payment can be made through Debit / Credit card (3.5% transaction fee), Paypal (5% transaction fee) or Bank Transfer / Deposit (no transaction fee)
